Experience the authentic flavor and satisfying crunch of Japanese-style chicken karaage without the mess of deep frying. This recipe utilizes the air fryer to create succulent, bite-sized chicken pieces with a delicate, airy crust. By marinating in a savory-sweet blend and coating in potato starch, you achieve a restaurant-quality appetizer that is healthier, lighter, and perfectly crisp every time.

Ingredients

Scale

1 lb boneless skinless chicken thighs
1 tbsp rice vinegar
1 tsp sugar
1 tbsp non-alcoholic mirin
2 tbsp soy sauce
1 tbsp fresh ginger, grated
1 tsp fresh garlic, grated
1/4 tsp black pepper
1 cup potato starch
1 tbsp neutral spray oil

Instructions

Dice the chicken thighs into uniform 1.5-inch cubes.
Combine the chicken with rice vinegar, sugar, mirin, soy sauce, grated ginger, garlic, and black pepper in a large bowl.
Massage the marinade into the chicken and let it sit for at least 15 minutes.
Coat each piece of marinated chicken thoroughly with potato starch, shaking off any excess.
Preheat the air fryer to 375°F.
Arrange the chicken pieces in a single layer in the air fryer basket without overcrowding.
Lightly spray the chicken pieces with oil.
Cook for 12-15 minutes, flipping halfway through, until golden brown and the internal temperature reaches 165°F.

Notes

Ensure you do not overcrowd the basket to maintain the crispiness of the starch. If needed, cook in batches. Use a meat thermometer to ensure the chicken is cooked through.
