Ingredients

Scale

2 medium ripe bananas
1 cup all-purpose flour
1/2 cup brown or granulated sugar
1/4 cup unsalted butter, softened
1/2 teaspoon baking soda
1/2 teaspoon vanilla extract

Instructions

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Peel the bananas and mash them in a large mixing bowl until smooth.
Add the softened butter, sugar, and vanilla extract to the mashed bananas and stir until well-combined.
Fold in the flour and baking soda until just combined, being careful not to overmix.
Scoop spoonfuls of the dough onto the prepared baking sheet with space between them.
Bake for 10 to 12 minutes until the edges are lightly set.

Notes

Use brown sugar for a deeper, molasses-like flavor or white sugar for a lighter cookie. Store in an airtight container at room temperature for up to 3 days.
