Ingredients

Scale

1 lb Ground Beef (85/15 lean)
1/2 Yellow Onion, diced
2 cloves Garlic, minced
1 oz Taco Seasoning
1 tbsp Tomato Paste
4 oz Green Chiles, diced
15 oz Red Enchilada Sauce
8 Corn Tortillas
3 cups Mexican Cheese Blend, shredded

Instructions

Preheat your oven to 375°F (190°C).
Brown the ground beef in a large skillet over medium-high heat until fully cooked.
Remove the beef from the pan using a slotted spoon and drain any excess fat.
Saute the diced onions in the same skillet until translucent and soft.
Add the minced garlic to the onions and cook for 30 seconds until fragrant.
Return the beef to the skillet and stir in the taco seasoning, tomato paste, and green chiles.
Add a splash of water to the skillet and simmer until the mixture is thick.
Warm the corn tortillas slightly to prevent them from cracking.
Spread a small amount of enchilada sauce on the bottom of a baking dish.
Spoon the beef mixture into the center of each tortilla, top with a little cheese, and roll tightly.
Place the enchiladas seam-side down in the baking dish.
Pour the remaining red enchilada sauce over the top and sprinkle generously with the remaining cheese.
Bake for 25 minutes until the cheese is melted and bubbling.

Notes

For the best texture, shred your own cheese from a block rather than using pre-shredded bags. If you prefer a crispier texture, broil for the final 2 minutes of baking. These enchiladas can be assembled in advance and kept in the refrigerator until ready to bake.
