2 lbs boneless skinless chicken thighs
1/2 cup fresh cilantro, chopped
1/4 cup fresh lime juice
2 tbsp olive oil
2 cloves garlic, minced
1 tsp ground cumin
1 tsp salt
12 corn tortillas
Optional: cabbage slaw, pickling jalapenos, cotija cheese
1. Whisk marinade ingredients in a bowl.
2. Add chicken and marinate for 1–4 hours.
3. Preheat grill to medium-high.
4. Grill chicken 6–8 mins per side until 165°F.
5. Rest for 5 mins then dice.
6. Warm tortillas on the grill.
7. Assemble with chicken and toppings.
Use chicken breasts if preferred, but watch cook time.
Marinate for at least 1 hour for best flavor.
Serve with extra lime wedges.
