800g (28.2oz) russet potatoes, peeled and sliced into fries
250g (8.8oz) extra lean ground beef
250g (8.8oz) extra lean ground pork
1 onion, finely chopped
3 cloves garlic, crushed
1 red bell pepper, finely chopped
1 green bell pepper, finely chopped
120ml (1/2 cup) chicken stock
60g (2.1oz) reduced-fat mozzarella, grated
60g (2.1oz) reduced-fat cheddar, grated
4 tablespoons reduced-fat mayonnaise
1.5 teaspoons honey
3 green onions, thinly sliced (green part only)
salt and black pepper
low-calorie spray oil
1 tablespoon paprika
1 teaspoon smoked paprika
1.5 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoon dried parsley
1 teaspoon dried oregano
3/4 teaspoon dried thyme
3/4 teaspoon cayenne
1. Combine all Cajun seasoning ingredients in a small bowl and set aside.
2. Preheat oven to 180°C fan, 200°C, 400°F, or gas mark 6.
3. Rinse potatoes in cold water until the water runs clear, then dry completely.
4. Mix mayonnaise, water, honey, and 1 1/2 teaspoons Cajun seasoning to make the sauce; set aside.
5. Toss potatoes with 1 1/2 teaspoons Cajun seasoning, salt, pepper, and spray oil. Bake on a parchment-lined tray for about 40 minutes, flipping halfway.
6. Cook beef, pork, onion, and garlic in a large pan until browned.
7. Add remaining seasoning, salt, pepper, peppers, and stock. Cook until softened and reduced.
8. Top fries with meat mixture and cheeses. Bake 6 to 8 minutes until melted and bubbly.
9. Finish with green onions and Cajun mayo. Serve immediately.
Freeze half of the cooked meat mixture for a quick future batch.
For the crispiest fries, do not overcrowd the tray.
Serve right away after assembling for the best texture.
