A hearty Cajun red bean soup made with smoky sausage, tender kidney beans, vegetables, tomatoes, and bold Cajun seasonings.
1 tbsp olive oil
12 oz smoked sausage or Andouille sausage, sliced
1 medium yellow onion, diced
2 celery stalks, diced
1 green bell pepper, diced
3 cloves garlic, minced
3 cans (15 oz each) red kidney beans, drained and rinsed
1 can (14.5 oz) diced tomatoes
5 cups chicken broth
1 1/2 tbsp Cajun seasoning
1 tsp dried thyme
1 bay leaf
1/2 tsp black pepper
1/2 tsp smoked paprika
Salt, to taste
2 tbsp fresh parsley, chopped
2 green onions, sliced
Cooked white rice, optional for serving
Hot sauce, optional
1. Brown the sausage.
2. Sauté onion, celery, and bell pepper.
3. Add garlic and seasonings.
4. Add beans, tomatoes, broth, and bay leaf.
5. Simmer 25–35 minutes.
6. Mash some beans for a thicker texture.
7. Adjust seasoning and remove bay leaf.
8. Garnish with parsley and green onions.
9. Serve hot with rice or cornbread.
Use Andouille sausage for a classic Cajun flavor.
Add cayenne or hot sauce for extra heat.
Store refrigerated up to 4 days.
Freeze for up to 3 months.
