A vibrant, healthy salad combining smoky grilled asparagus with traditional Mediterranean Greek salad ingredients.
1 lb asparagus, trimmed
1 tbsp olive oil
1 cucumber, sliced
1 cup cherry tomatoes
1/2 cup red onion, sliced
1/2 cup Kalamata olives
4 oz feta cheese
2 tbsp parsley, chopped
Juice of 1 lemon
2 tbsp olive oil
1 tsp dried oregano
Salt and pepper
1.Grill asparagus with olive oil until charred.
2.Chop into 2-inch pieces.
3.Combine vegetables and olives in a bowl.
4.Whisk dressing ingredients.
5.Toss salad with dressing.
6.Top with feta and parsley.
Serve warm or at room temperature. Great with grilled chicken.
