Cheesy Baked Cabbage Steaks with Garlic and Parmesan

Tender roasted cabbage steaks seasoned with garlic and herbs, then topped with bubbly mozzarella and Parmesan.

Ingredients

1 head green cabbage, trimmed and sliced into 1-inch steaks

2 tablespoons extra-virgin olive oil

1/2 teaspoon kosher salt

Freshly ground black pepper, to taste

2 garlic cloves, grated

1/4 teaspoon paprika or cayenne

1 teaspoon Italian seasoning

3/4 cup freshly grated Parmesan, divided

3/4 cup shredded mozzarella cheese

1 tablespoon chopped parsley

1/2 teaspoon crushed red pepper flakes

Instructions

1. Preheat oven to 425°F.

2. Mix oil, garlic, paprika, salt, pepper, Italian seasoning, and 1/3 of the Parmesan.

3. Arrange cabbage steaks on a rimmed baking sheet and brush with seasoned oil.

4. Roast for about 20 minutes until tender and golden.

5. Top with mozzarella and another 1/3 of the Parmesan.

6. Broil for about 3 minutes until bubbly and golden.

7. Finish with remaining Parmesan, parsley, and red pepper flakes.

Notes

Keep the cabbage core intact to help the steaks hold together.

Watch the cheese closely while broiling.

Serve immediately for the best texture.
