A hearty and comforting casserole made with seasoned ground beef, tender potatoes, creamy queso, and plenty of melted cheddar cheese.
1 lb ground beef
3–4 medium potatoes, diced
1 cup queso cheese sauce
1 cup shredded cheddar cheese
1 packet taco seasoning
Salt and black pepper, to taste
1. Preheat oven to 375°F.
2. Brown ground beef.
3. Add diced potatoes and taco seasoning.
4. Cook until potatoes are tender.
5. Stir in queso and half the cheddar.
6. Transfer to a baking dish.
7. Top with remaining cheddar.
8. Bake 25–30 minutes until bubbly and golden.
9. Rest briefly and serve hot.
Add diced bell peppers or corn for extra flavor.
Use ground turkey or chicken instead of beef.
Monterey Jack or pepper Jack can replace cheddar.
Store leftovers refrigerated for up to 3 days.
