1/2 lb chicken breast, cubed
2 tbsp cornstarch
2 tbsp lemon juice
2 tbsp low sodium soy sauce
1/2 tsp ground ginger
1 cup chicken broth
3 tbsp vegetable oil
1 shallot, chopped
1 bell pepper, cut into strips
4 cups shredded cabbage
1 carrot, cut into strips
1 1/2 cups frozen peas, thawed
1 scallion, sliced for garnish
Sesame seeds for garnish
In a medium bowl, whisk together cornstarch, lemon juice, soy sauce, ginger, and chicken broth.
Toss chicken in the marinade and let sit for 15 minutes.
Heat 2 tbsp oil in a large skillet or wok over medium-high heat.
Drain chicken and add to the hot skillet, cooking for 4 minutes until golden.
Remove chicken to a plate.
Add remaining 1 tbsp oil to the skillet.
Sauté shallots, bell peppers, carrots, and cabbage until tender-crisp.
Stir in peas and the reserved marinade.
Return chicken to the pan and toss until the sauce thickens and coats everything evenly.
Serve hot garnished with sliced scallions and sesame seeds.
Ensure chicken is patted dry before tossing in the skillet for a better sear. If you prefer more heat, add a pinch of chili flakes. Store leftovers in an airtight container for up to 3 days.
