Juicy Cajun-seasoned chicken and linguine tossed with tomatoes in a creamy garlic Parmesan sauce.

8 oz linguine pasta

1 Tbsp salt, for pasta water

2 boneless skinless chicken breasts

2 tsp olive oil

2 Tbsp unsalted butter

1 1/2 to 2 Tbsp Cajun seasoning, divided

3 garlic cloves, minced

2/3 cup diced tomatoes

1 1/2 cups heavy whipping cream

1/2 cup grated Parmesan cheese

2 Tbsp fresh parsley, finely chopped

1/2 cup reserved pasta water, as needed

Instructions

1. Cook linguine until al dente; reserve 1/2 cup pasta water and drain.

2. Pound chicken evenly and season with Cajun seasoning.

3. Sear chicken in oil, then cook to 165°F and slice.

4. Melt butter and sauté garlic briefly; add tomatoes and cook 2 minutes.

5. Stir in cream, Parmesan, and remaining Cajun seasoning; gently simmer.

6. Add chicken and pasta; toss, adding pasta water as needed.

7. Garnish with parsley and Parmesan and serve.

Notes

Adjust Cajun seasoning to taste because brands vary in salt and heat.

Freshly grated Parmesan melts smoothly into the cream sauce.

Reheat leftovers gently with a splash of water or cream.
