Ingredients

Scale

7 oz 70% dark chocolate
4 oz semi-sweet chocolate
1 ½ cups unsalted butter
¾ cup cocoa powder
2 tsp vanilla extract
½ tsp salt
1 ¾ cups sugar (for frosting)
1 ½ cups heavy whipping cream
2 cups all-purpose flour
1 cup cocoa powder (for cake)
2 tsp baking soda
1 tsp baking powder
½ tsp salt
1 cup granulated sugar
1 cup dark brown sugar
¾ cup vegetable oil
1 cup full fat sour cream
3 large eggs
2 tsp vanilla extract
1 cup boiling water
1 tsp instant coffee

Instructions

Prepare the frosting by combining dark and semi-sweet chocolates, butter, cocoa, vanilla, and salt in a bowl.
Bring sugar and heavy cream to a boil in a pot, then pour over the chocolate mixture.
Whisk until glossy and smooth, strain to remove lumps, and refrigerate for two hours until spreadable.
Preheat oven to 350F and prepare three 8-inch round pans with parchment paper and flour.
Whisk together all dry cake ingredients in a large bowl.
In a separate bowl, mix wet ingredients including eggs, oil, sour cream, and vanilla.
Gradually combine dry ingredients with the wet mixture while adding the hot water mixed with instant coffee.
Divide batter between prepared pans.
Bake for 28-32 minutes or until a toothpick comes out clean.
Cool completely before frosting and serving.

Notes

Ensure the boiling water and coffee mixture is well-incorporated to bloom the cocoa flavor. Store the cake in an airtight container at room temperature for up to 3 days. The frosting can be made up to 24 hours in advance if kept refrigerated.
