Ingredients

Scale

1 pound lean ground beef
14 ounces beef kielbasa, sliced
1 large onion, diced
4 garlic cloves, minced
3 medium potatoes, peeled and diced
4 cups beef broth
15 ounces kidney beans, rinsed and drained
15 ounces pinto beans, rinsed and drained
15 ounces sweet yellow corn, drained
4 ounces green chiles
15 ounces diced tomatoes
1 tablespoon chili powder
1.5 teaspoons ground cumin
0.5 teaspoon smoked paprika
Salt and pepper to taste

Instructions

In a large Dutch oven or heavy-bottomed pot, brown the beef kielbasa over medium-high heat, then remove and set aside.
Add the diced onion to the pot and sauté until softened, about 8 minutes.
Stir in the minced garlic and cook for 1 minute until fragrant.
Add the ground beef, season with salt and pepper, and cook until browned, draining excess fat if necessary.
Return the sausage to the pot.
Pour in the beef broth, chili powder, cumin, and smoked paprika.
Stir in the potatoes, kidney beans, pinto beans, corn, green chiles, and diced tomatoes.
Bring to a simmer, cover, and cook until the potatoes are tender, about 20-25 minutes.
Serve hot.

Notes

Ensure you use a beef-based kielbasa to keep the recipe halal. If the stew becomes too thick, add an additional half cup of beef broth.
