For the Biscuits:
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon sugar
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon paprika
1/2 cup (1 stick) unsalted butter, cold and cubed
1 cup shredded sharp cheddar cheese
3/4 cup whole milk or buttermilk
For the Crab Filling:
8 ounces lump crab meat, drained and picked over
3 tablespoons mayonnaise
2 tablespoons cream cheese, softened
1 teaspoon Dijon mustard
1 tablespoon lemon juice
1 tablespoon green onion, finely chopped
1 teaspoon Old Bay seasoning or other seafood seasoning
1/4 teaspoon black pepper
For the Lemon Butter Topping:
3 tablespoons unsalted butter, melted
1 tablespoon lemon juice
1/2 teaspoon garlic powder
1 tablespoon fresh parsley, chopped
1. Preheat oven to 400°F and line a baking sheet with parchment.
2. Whisk dry biscuit ingredients; cut in cold butter, then stir in cheddar and milk just until combined.
3. Mix all crab filling ingredients together.
4. Flatten 2 tablespoons dough, add 1 tablespoon filling, then wrap and seal.
5. Place seam-side down and repeat with remaining dough and filling.
6. Bake 18–20 minutes, until golden.
7. Mix melted butter, lemon juice, garlic powder, and parsley.
8. Brush warm biscuits with lemon butter and serve.
Drain the crab thoroughly to prevent a wet filling.
Do not overmix the biscuit dough.
Seal the dough completely around the crab and bake seam-side down.
Refrigerate cooked leftovers promptly in an airtight container.
