A hearty, cheesy slow cooker cowboy casserole made with seasoned ground beef, tender Yukon Gold potatoes, kidney beans, black beans, sweet corn, Rotel tomatoes, and melted cheddar cheese. A comforting family dinner with simple ingredients and minimal hands-on preparation.

Ingredients

Scale

1 pound ground beef

1 small onion, diced

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

12-ounce bag frozen corn

4 medium Yukon Gold potatoes, diced into 1-inch chunks

15-ounce can red kidney beans, drained and rinsed

15-ounce can black beans, drained and rinsed

10.5-ounce can cream of chicken soup

10-ounce can mild Rotel (diced tomatoes with green chiles)

2 teaspoons minced garlic

2 cups shredded cheddar cheese (more or less, to taste)

Instructions

1. Add the ground beef and diced onion to a large skillet over medium heat. Cook, crumbling the beef, until browned and the onion is softened.

2. Drain any excess grease. Stir in the smoked paprika, salt, and black pepper. Transfer the seasoned beef mixture to a 6-quart slow cooker.

3. Add the frozen corn, diced Yukon Gold potatoes, drained kidney beans, drained black beans, cream of chicken soup, mild Rotel, and minced garlic. Stir until evenly combined.

4. Cover and cook on HIGH for 3–4 hours or LOW for 6–7 hours, until the potatoes are fork-tender.

5. Sprinkle the shredded cheddar cheese evenly over the casserole. Cover and cook for another 10–15 minutes, until the cheese melts.

6. Serve warm. Top with sour cream and sliced green onions, if desired.

Notes

Cut the Yukon Gold potatoes into evenly sized 1-inch chunks so they cook consistently.

Drain the ground beef thoroughly before adding it to the slow cooker to prevent excess grease.

Frozen corn can be added directly without thawing.

Drain and rinse both varieties of canned beans before adding them.

Use mild Rotel for the original flavor or hot Rotel for an optional spicier variation.

Sharp cheddar provides a stronger cheese flavor. Monterey Jack or cheddar-Jack can also be used as optional substitutions.

Add the shredded cheese only during the final 10–15 minutes of cooking.

Optional serving toppings include sour cream and sliced green onions.

Store leftovers in airtight containers in the refrigerator for 3–4 days.

Reheat leftovers to an internal temperature of 165°F.

Freezing is possible, but potatoes and the creamy sauce may change texture after thawing.
