Ingredients

Scale

4 oz unsalted butter, room temperature
1 1/2 cups granulated sugar
2 teaspoons baking powder
1 teaspoon kosher salt
4 large eggs, room temperature
1/2 cup hot strong coffee
3/4 cup black cocoa powder
3/4 cup heavy cream
2 cups all-purpose flour

Instructions

Preheat your oven to 350 degrees F and grease two 8-inch round pans, dusting them with cocoa powder.
In a stand mixer, cream together the butter, sugar, baking powder, and salt until fluffy.
Add the eggs one at a time, mixing well after each addition.
In a separate bowl, whisk the hot coffee into the black cocoa powder until smooth, then stir in the cream.
Slowly incorporate the cocoa mixture into the butter base on medium speed.
Gradually add the flour in small increments until the batter is smooth.
Pour the batter into prepared pans and bake for 20 to 25 minutes.
Remove from the oven, let cool, and serve.

Notes

Ensure all ingredients are at room temperature for the best emulsion. Dust pans with cocoa powder instead of flour to avoid white streaks on the finished cake. Watch the oven closely as the cake can dry out if overbaked.
