Soft, rich chocolate cookies filled with a sweet peanut butter center and loaded with Reese’s Pieces and peanut butter chips.
Filling
1/2 cup peanut butter
1 1/2 cups powdered sugar
1 1/2 ounces whole milk
1 teaspoon vanilla extract
1/4 teaspoon salt
Cookie Dough
2 cups all-purpose flour
1/4 cup unsweetened cocoa powder
1/4 cup black cocoa powder
1 (3.4 ounce) box instant chocolate fudge pudding mix, unprepared
2 tablespoons powdered milk
1/2 teaspoon salt
1/4 teaspoon baking soda
1 cup granulated sugar
1/2 cup salted butter, softened
1 large egg, room temperature
1 additional large egg yolk, room temperature
2 ounces whole milk, room temperature
1 1/2 teaspoons pure vanilla extract
3/4 cup Reese’s Pieces, plus more for topping
3/4 cup Reese’s Peanut Butter Chips, plus more for topping
1. Make the peanut butter filling by beating peanut butter, powdered sugar, salt, vanilla extract, and milk until combined.
2. Preheat oven to 350°F and line a large baking sheet with parchment paper.
3. Whisk flour, cocoa powders, pudding mix, powdered milk, salt, and baking soda in a medium bowl.
4. Cream softened butter and granulated sugar for 1 minute.
5. Beat in the egg until combined.
6. Add the egg yolk, milk, and vanilla extract and mix just until combined.
7. Add half of the dry ingredients and mix just until incorporated.
8. Add the remaining dry ingredients and mix until combined without overmixing.
9. Fold in Reese’s Pieces and peanut butter chips.
10. Divide the dough into 9 portions, about 4 to 4.2 ounces each.
11. Flatten each portion and shape it into a bowl.
12. Place a 1-ounce ball of peanut butter filling in the center.
13. Fold the cookie dough around the filling and seal completely.
14. Roll each filled dough ball between your palms until smooth.
15. Place cookies 3 to 4 inches apart on the prepared baking sheet.
16. Add extra Reese’s Pieces and peanut butter chips on top if desired.
17. Bake for 10 to 12 minutes, until the edges are just set and the tops look matte.
18. Cool cookies on the baking sheet for 15 minutes.
19. Transfer to a wire rack and cool completely.
Makes 9 large cookies.
Do not overmix the dough.
The cookies will look slightly underdone when removed from the oven.
Allow cookies to cool on the baking sheet for 15 minutes before transferring.
Store completely cooled cookies in an airtight container.
