A hearty homemade chicken and rice soup with tender chicken, long-grain rice, vegetables, fresh thyme, and savory broth.
1 tablespoon extra-virgin olive oil
1 medium yellow onion, chopped
2 medium carrots, chopped
2 celery ribs, cut into 1/2-inch-thick slices
2 garlic cloves, minced
4 fresh thyme sprigs
1 bay leaf
8 cups chicken stock or broth
1 cup long-grain white rice, uncooked
2 cups shredded cooked chicken
Kosher salt and freshly ground black pepper, to taste
Fresh lemon juice, for serving
Chopped fresh parsley, for serving
1. Heat olive oil in a large pot.
2. Cook onion, carrots, and celery for 5 minutes.
3. Add garlic, thyme, and bay leaf; cook 1 minute.
4. Add broth and bring to a boil.
5. Stir in rice and chicken; season.
6. Simmer 25–30 minutes until rice is tender.
7. Add extra broth if needed.
8. Serve with lemon juice and parsley.
Use rotisserie chicken for convenience.
Add 1–2 cups broth if the rice absorbs too much liquid.
Refrigerate leftovers for 3–4 days.
