Tender chicken thigh strips with savory soy sauce, garlic, onion, carrot, and spring onion, made without rice wine.
300 g boneless skinless chicken thighs, cut into 2 cm strips
3/4 cup sliced onion
1/4 cup shredded carrot
1 tbsp soy sauce
1 tsp dark soy sauce, optional
3 tbsp unsalted chicken broth, divided
3 tbsp cooking oil, divided
2 tbsp chopped spring onion
2 tbsp cornstarch
2 cloves garlic, minced
1. Marinate chicken with soy sauces, garlic, cornstarch, and 2 tbsp broth for 15 minutes.
2. Heat 1 tbsp oil and cook chicken about 5 minutes, until it reaches 165°F; remove.
3. Add remaining oil and stir-fry onion and carrot about 5 minutes.
4. Return chicken with spring onion and stir-fry 20–30 seconds.
5. Add remaining broth, toss briefly, and serve.
Use unsalted chicken broth to control sodium.
Low-sodium broth or water can also be used.
Serve immediately with rice or noodles.
