An easy slow cooker cabbage roll casserole made with seasoned ground beef, tender cabbage, white rice, tomatoes, and melted cheddar and Monterey Jack cheese.
1 lb ground beef
1 medium onion, chopped
3 cloves garlic, minced
1/2 tsp paprika
1/2 tsp onion powder
1/4 tsp ground cayenne pepper
2 tbsp brown sugar
1 (28 oz) can crushed tomatoes
1 cup low-sodium beef broth
1/2 tsp salt, or to taste
1/2 tsp freshly ground black pepper, or to taste
1 cup long-grain white rice
1 large head green cabbage, chopped
1 1/2 cups shredded cheddar cheese
1 1/2 cups shredded Monterey Jack cheese
1. Brown ground beef in a large skillet over medium heat.
2. Add onion and cook until the beef is browned and onion is soft.
3. Reduce heat, add garlic, and cook for 1 minute.
4. Drain excess grease.
5. Stir in paprika, onion powder, cayenne, brown sugar, crushed tomatoes, and beef broth.
6. Season with salt and pepper.
7. Stir in uncooked long-grain rice.
8. Layer half of the beef mixture in the crockpot.
9. Add half of the chopped cabbage.
10. Layer the remaining beef mixture and remaining cabbage.
11. Cover and cook on LOW for 4–6 hours, until the rice and cabbage are tender.
12. Sprinkle cheddar and Monterey Jack cheese over the top.
13. Cover for 10 minutes, until the cheese is melted.
14. Serve warm.
Use 85/15 ground beef for extra flavor.
Reduce or omit cayenne pepper for a milder casserole.
Do not pre-cook the rice.
Leftovers can be refrigerated for 3–4 days.
Ground turkey can be substituted for ground beef.
