Crispy pan-fried chicken bites tossed in a sticky, sweet and spicy buffalo brown sugar glaze. Ready in 25 minutes and perfect for weeknight dinners.

Ingredients

2 boneless skinless chicken breasts, cut into 1-inch pieces (1.5 lb / 680g)

1/2 cup cornstarch

1 tsp garlic powder

1 tsp salt

1 tsp black pepper, freshly cracked

1/4 cup vegetable oil, divided

1/2 cup buffalo sauce

1/2 cup brown sugar

1 Tbsp apple cider vinegar

1/4 tsp crushed red pepper flakes

Instructions

1. Add chicken, cornstarch, garlic powder, salt and pepper to a ziplock bag and shake to coat evenly.

2. Heat 2 Tbsp oil in a medium skillet over medium-high heat.

3. Add half the chicken in single layer, cook 3-4 minutes per side until golden and cooked through. Remove and repeat with remaining oil and chicken.

4. In same skillet, add buffalo sauce, brown sugar, vinegar and red pepper flakes. Stir 2 minutes until sugar dissolves and sauce thickens.

5. Return chicken to skillet, toss to coat and warm through for 1 minute. Serve hot.

Notes

Cut chicken evenly for uniform cooking.

Don’t overcrowd the pan – cook in 2 batches for crispiness.

Adjust red pepper flakes for more or less heat.

Store leftovers up to 4 days in fridge. Reheat in skillet for best texture.

Freeze un-sauced cooked chicken up to 2 months, then toss with fresh sauce.
