Crispy golden salmon patties made with canned salmon, sautéed onion and bell pepper, panko, parsley, and simple seasonings.
14.75 oz canned salmon, well drained
2 Tbsp olive oil, divided
2 Tbsp unsalted butter, divided
1 medium yellow onion, finely diced
1/2 red bell pepper, seeded and diced
1/2 cup Panko breadcrumbs
1 large egg, lightly beaten
2 Tbsp mayonnaise
1 tsp Worcestershire sauce
1 tsp garlic salt
1/4 tsp freshly ground black pepper
1/4 cup fresh parsley, finely minced
1. Sauté onion and bell pepper in 1 Tbsp each olive oil and butter for 7–9 minutes.
2. Combine salmon, vegetables, panko, egg, mayonnaise, Worcestershire, seasonings, and parsley.
3. Shape into 2-inch patties.
4. Heat remaining oil and butter in a clean skillet.
5. Cook patties 3–4 minutes per side until golden and cooked through.
6. Drain briefly and serve warm.
Drain the salmon thoroughly so the patties hold together.
Reduce the skillet heat if the patties brown too quickly.
Refrigerate cooked leftovers for up to 3–4 days.
