Ingredients

Scale

12 graham cracker sheets, broken in half
3/4 cup creamy peanut butter
4 tablespoons unsalted butter, softened
1 1/4 cups powdered sugar
1/8 teaspoon salt
1 teaspoon vanilla extract
1 3/4 cups chocolate chips
2 tablespoons coconut oil, divided
1 cup peanut butter chips (optional)

Instructions

Break 12 graham cracker sheets in half to create 24 squares and line a baking sheet with parchment paper.
In a large bowl, mix peanut butter, softened butter, powdered sugar, salt, and vanilla until smooth.
Form the filling into 12 balls and press one ball between two cracker squares to create a sandwich.
Smooth the edges of the filling and set the sandwiches on the prepared baking sheet.
In the microwave, melt the chocolate chips with 1 1/2 tablespoons of coconut oil in 30-second intervals until glossy.
Dip each sandwich into the melted chocolate, tap off excess, and return to the tray.
Optional: Melt peanut butter chips with remaining coconut oil and drizzle over the set chocolate.
Refrigerate until the chocolate shell is firm.

Notes

Store in the refrigerator in an airtight container for up to one week. You can use a fork to dip the sandwiches into the chocolate for a cleaner process. Ensure the butter is at room temperature to prevent lumps in the filling.
