A hearty one-pot hamburger stew with ground beef, potatoes, carrots, and a savory tomato-beef broth.
1 tablespoon olive oil
1 medium onion, chopped
3 celery stalks, chopped
4 cloves garlic, minced
1 pound lean ground beef
3 tablespoons all-purpose flour
1 (6-ounce) can tomato paste
4 cups beef broth, plus more if needed
1 tablespoon Worcestershire sauce
1/2 teaspoon Italian seasoning
2 Russet potatoes, peeled and diced
4 medium carrots, peeled and sliced
1 cup frozen peas (optional)
Salt and black pepper, to taste
1. Sauté onion and celery in oil over medium-high heat for 5–7 minutes. Add garlic; cook 30 seconds.
2. Add ground beef and cook, breaking it up, until browned, about 8 minutes.
3. Stir in flour and cook 1–2 minutes. Stir in tomato paste.
4. Add broth, Worcestershire sauce, Italian seasoning, potatoes, and carrots. Bring to a boil.
5. Reduce to a rapid simmer. Cover with the lid slightly ajar and cook at least 30 minutes, stirring occasionally, until vegetables are tender.
6. Stir in peas, if using. Add broth if needed. Season with salt and pepper.
For a thicker stew, simmer uncovered a few extra minutes. For a soupier stew, add more beef broth.
Refrigerate leftovers 3–4 days or freeze 2–3 months. Reheat leftovers to 165°F.
