2 lbs beef chuck roast, cut into 1 1/2-inch cubes
2 tbsp olive oil
1 medium yellow onion, diced
3 cloves garlic, minced
4 medium carrots, peeled and chopped
3 medium Yukon Gold potatoes, cut into bite-size pieces
2 tbsp tomato paste
2 tbsp all-purpose flour
4 cups beef broth
1 cup dry red wine or additional beef broth
2 tbsp Worcestershire sauce
1 tsp dried thyme
1 tsp dried rosemary
1 tsp paprika
1 tsp salt
1/2 tsp black pepper
2 bay leaves
2 cups all-purpose flour
1 tbsp baking powder
1/2 tsp salt
1/2 tsp garlic powder
1/4 tsp black pepper
4 tbsp cold unsalted butter
3/4 cup whole milk
2 tbsp fresh parsley, chopped
1. Season and brown the beef.
2. Cook onion and garlic.
3. Stir in tomato paste and flour.
4. Add broth, wine, Worcestershire sauce, and herbs.
5. Add beef, carrots, and potatoes.
6. Simmer 1 1/2–2 hours until tender.
7. Mix dumpling ingredients into a soft dough.
8. Drop dough over the stew.
9. Cover and cook 18–22 minutes.
10. Garnish with parsley and serve.
Use beef chuck for the most tender results.
Replace red wine with additional beef broth.
Do not overmix the dumpling dough.
Keep the pot covered while dumplings cook.
