4 chicken breasts (about 700g/1.5lbs altogether)
90 g (3/4 cup) plain (all-purpose) flour
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
1 tsp paprika
1 tsp dried thyme
2 eggs, whisked
150 g (5 cups) cornflakes, crushed
3 tbsp neutral oil
180 ml (1/2 cup) runny honey
3 tbsp hot pepper sauce
2 tbsp unsalted butter
1/2 tsp smoked paprika
1/2 tsp cayenne pepper
1/2 tsp garlic powder
Maldon salt flakes, optional
Pickled gherkins, optional
1. Preheat oven to 400°F (200°C) and line a large baking sheet with parchment.
2. Slice chicken breasts horizontally into 8 thin chicken steaks.
3. Mix flour, salt, pepper, garlic powder, paprika, and thyme in a shallow bowl.
4. Place whisked eggs in a second bowl.
5. Place crushed cornflakes in a third bowl and stir in the oil.
6. Coat each chicken piece in flour, then egg, then cornflakes.
7. Place chicken in a single layer on the prepared baking sheet.
8. Bake for 20–25 minutes, until golden and cooked through.
9. Add honey, hot pepper sauce, butter, smoked paprika, cayenne, and garlic powder to a saucepan.
10. Heat over medium heat, stirring until the butter melts, then turn off the heat.
11. Serve chicken with hot honey sauce and optional Maldon salt and pickles.
Adjust the cayenne pepper to control the heat.
Keep the sauce separate until serving for the crispiest coating.
Chicken should reach 165°F (73.9°C) internally.
