6 one-day-old large croissants
6 tbsp sliced almonds
Powdered sugar, for dusting
Vanilla Simple Syrup:
3/4 cup water
2 tbsp granulated sugar
1 tsp vanilla extract
Almond Filling:
1 cup almond flour or almond meal
1/2 cup granulated sugar
8 tbsp salted butter, softened
1 large egg
1 tsp almond extract
1. Dry croissants overnight and slice horizontally.
2. Heat water and sugar until dissolved. Remove from heat, add vanilla, and cool.
3. Beat almond flour, sugar, and butter until smooth. Beat in egg and almond extract.
4. Preheat oven to 350°F and line a baking sheet with parchment.
5. Briefly dip croissant surfaces in syrup.
6. Spread 2–3 tbsp filling inside each croissant and a thin layer on top.
7. Top with sliced almonds and bake 15–20 minutes until golden.
8. Cool slightly and dust with powdered sugar.
