Juicy, warmly spiced chicken roasted with shallots and served with fresh vegetables, pita, pickles, and creamy tahini sauce.
1–1 1/2 lbs boneless skinless chicken thighs or chicken breast, sliced into 1-inch pieces
2 tbsp olive oil
3 tbsp Greek yogurt
2 garlic cloves, grated
1 large shallot, thickly sliced
1 1/2 tsp salt
1/2 tsp black pepper
3 tsp shawarma seasoning
Pita bread
Sliced tomatoes
Sliced onions with sumac
Fresh parsley
Iceberg lettuce
Sliced pickles
Pickled turnips
French fries
For Tahini Sauce:
1/2 cup tahini paste
1/3 cup fresh lemon juice
2 garlic cloves, crushed
1/2 tsp salt
1/4 cup cold water
For Toum:
1 cup peeled garlic cloves
2 tsp kosher salt
3 cups neutral oil
1/2 cup lemon juice
1. Preheat oven to 450°F.
2. Whisk marinade ingredients.
3. Coat chicken and shallots.
4. Spread evenly on a sheet pan.
5. Bake 12–15 minutes.
6. Broil 1–3 minutes for char, if desired.
7. Mix tahini sauce ingredients and adjust with water.
8. Serve chicken with pita, vegetables, pickles, and sauces.
Do not overcrowd the sheet pan for better browning.
Chicken is ready when fully cooked through.
Toum can be prepared ahead and refrigerated.
Serve with pita, fries, or a fresh salad.
