A comforting, brothy dish featuring creamy cannellini beans, savory chicken sausage, and tender kale with a bright lemon finish.

Ingredients

Scale

1 lb Italian chicken sausage (pork-free)

2 cans (15 oz) cannellini beans, rinsed

1 bunch Tuscan kale, chopped

1 yellow onion, diced

3 cloves garlic, minced

4 cups chicken broth

1 tbsp olive oil

1 squeeze fresh lemon juice

1 tsp red pepper flakes

Salt and pepper to taste

Instructions

1.Brown sausage in olive oil; remove.

2.Sauté onion and garlic until soft.

3.Add broth and beans; simmer 10 mins.

4.Stir in kale and sausage; simmer 5 mins.

5.Finish with lemon juice and seasoning.

Notes

Use turkey sausage for a lean option.

Smash some beans to thicken the broth.

Store in the fridge for up to 4 days.
