A smooth sweet and spicy mango sauce made with fresh habanero, honey, garlic, ginger, lime, and soy sauce.
1 large ripe mango, peeled and diced
1-2 habanero peppers, stems removed
4 cloves garlic, peeled
1/4 cup honey
1/4 cup apple cider vinegar
2 tablespoons soy sauce or tamari
1 tablespoon fresh ginger, grated
1 tablespoon fresh lime juice
1/2 cup water or chicken/vegetable broth
1/2 teaspoon salt, or to taste
1 tablespoon cornstarch
2 tablespoons cold water
1. Blend mango, habanero, garlic, honey, vinegar, soy sauce, ginger, lime juice, water or broth, and salt until smooth.
2. Pour into a saucepan and bring to a gentle simmer.
3. Reduce heat and simmer for 10-15 minutes, stirring occasionally.
4. Mix cornstarch with cold water and whisk the slurry into the sauce.
5. Cook for 2-3 minutes until thickened.
6. Taste carefully and adjust seasoning as needed.
7. Cool and transfer to an airtight container.
Wear food-preparation gloves when handling habaneros and avoid touching your face.
Use 1 habanero for less heat or 2 for a hotter sauce.
For a gluten-free sauce, use gluten-free tamari.
The sauce thickens further as it cools.
