A moist cranberry orange quick bread made with fresh orange juice, fragrant zest, butter, and tart cranberries, with an optional orange glaze.
For the bread:
2 cups all-purpose flour
1 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine salt
1 tablespoon orange zest
3/4 cup freshly squeezed orange juice
1/2 cup unsalted butter, melted and slightly cooled
2 large eggs, room temperature
1 teaspoon vanilla extract
1 1/2 cups fresh or frozen cranberries
Optional orange glaze:
1/2 cup powdered sugar
1–2 tablespoons orange juice
1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
2. Whisk flour, sugar, baking powder, baking soda, salt, and orange zest.
3. Whisk orange juice, melted butter, eggs, and vanilla separately.
4. Gently combine wet and dry mixtures just until no dry flour remains.
5. Fold in cranberries.
6. Transfer to pan and bake 55–65 minutes, until a toothpick comes out clean or with a few crumbs.
7. Cool 10 minutes in the pan, then transfer to a rack and cool completely.
8. For the optional glaze, whisk powdered sugar with orange juice and drizzle over the cooled loaf.
Use fresh or unthawed frozen cranberries.
Avoid overmixing the batter.
