Tender ground beef meatloaf with savory mushrooms, onion, garlic, thyme, and melted Swiss cheese.

Ingredients

1 1/2 lbs ground beef

1 cup mushrooms, finely chopped

1 small onion, finely diced

2 cloves garlic, minced

1 cup shredded Swiss cheese

3/4 cup breadcrumbs

1 egg

1/4 cup milk

2 tbsp Worcestershire sauce

1 tsp dried thyme

Salt and pepper, to taste

Extra Swiss cheese for topping, optional

Instructions

1. Preheat oven to 375°F (190°C).

2. Cook mushrooms, onion, and garlic 5–7 minutes; cool slightly.

3. Combine beef, vegetables, cheese, breadcrumbs, egg, milk, Worcestershire, thyme, salt, and pepper.

4. Shape into a loaf and bake 45–55 minutes, until the center reaches 160°F.

5. Add extra Swiss during the final 10 minutes, if desired.

6. Rest 5–10 minutes before slicing.

Notes

Cook excess moisture from the mushrooms before mixing.

Mix the beef gently for a tender texture.

Bake in a loaf pan or as a free-form loaf on a parchment-lined baking sheet.
