Golden seasoned chicken and tender pasta cooked in one pot with garlic, Parmesan, chicken stock, and a creamy sauce.
1 lb chicken tenderloins or cutlets
Salt and black pepper, to taste
1 tsp Italian seasoning, divided
2 tbsp shredded Parmesan cheese
2 tbsp all-purpose flour
2 tsp olive oil, divided
2 tbsp butter, divided
1/2 medium yellow onion, finely diced
3 cloves garlic, minced
2 cups chicken stock
3/4 cup half-and-half
8 oz dried pasta
3/4 cup shredded Parmesan cheese
1. Coat chicken with 1/2 tsp Italian seasoning, salt, pepper, 2 tbsp Parmesan, and flour.
2. Heat 1 tbsp butter and 1 tsp oil; cook chicken until golden and cooked through. Remove.
3. Add remaining butter and oil; cook onion 2 minutes and garlic 1 minute.
4. Deglaze with 1/2 cup stock, then add remaining stock and half-and-half.
5. Add pasta, bring to a boil, cover, and simmer on low 11–13 minutes, stirring occasionally.
6. Stir in remaining seasoning and 3/4 cup Parmesan.
7. Return chicken to the pot, season to taste, and serve.
The sauce thickens as it rests.
Freshly grated Parmesan melts most smoothly.
Add a splash of stock if the pasta becomes too thick.
