Juicy oven baked chicken thighs with crispy golden skin, garlic, paprika, Italian herbs, and butter. An easy, flavorful chicken dinner made with simple pantry ingredients.

2 tablespoons olive oil

2 teaspoons garlic powder

2 teaspoons onion powder

1 teaspoon ground paprika

1 teaspoon Italian seasoning

1 teaspoon dried parsley

2 teaspoons salt

1/2 teaspoon black pepper

2 pounds bone-in, skin-on chicken thighs (approximately 6–8 pieces)

1 tablespoon butter, diced

Instructions

1. Preheat oven to 400°F. Line a rimmed baking sheet with foil and preheat the pan in the oven.

2. Mix olive oil, garlic powder, onion powder, paprika, Italian seasoning, parsley, salt, and pepper into a paste.

3. Pat chicken thighs dry and coat evenly with the seasoning mixture.

4. Carefully arrange chicken skin-side up on the hot baking sheet. Dot with butter.

5. Bake for 20 minutes, then baste with pan juices.

6. Bake another 10 minutes, baste again, and continue cooking for 5–15 minutes until the internal temperature reaches at least 165°F.

7. Rest for 5 minutes before serving.

Notes

Use bone-in, skin-on chicken thighs for the crispiest results.

Pat chicken completely dry before seasoning.

For extra crispy skin, broil briefly at the end if your pan is broiler-safe.

Chicken thighs may become more tender when cooked to 175–185°F.

Store leftovers in the refrigerator for 3–4 days.

Freeze cooked chicken for up to 4 months for best quality.

Reheat leftovers to an internal temperature of 165°F.

Boneless chicken thighs cook faster; adjust baking time accordingly.
