A fruity homemade hot sauce made with fresh pineapple, fiery habanero peppers, garlic, vinegar, brown sugar, and fresh cilantro.
2 cups fresh pineapple, peeled and cubed
4 habanero peppers, seeded and minced
1/2 cup white vinegar
1/4 cup water
2 cloves garlic, minced
2 tablespoons brown sugar
1 teaspoon salt
1/4 cup fresh cilantro, chopped
1. Combine pineapple, habaneros, vinegar, water, garlic, brown sugar, and salt in a saucepan.
2. Bring to a simmer, reduce heat, cover, and cook for 15–20 minutes until pineapple is tender.
3. Remove from heat and cool for about 10 minutes.
4. Carefully blend until mostly smooth or to your preferred texture.
5. Stir in chopped cilantro.
6. Transfer to clean containers, cool promptly, cover, and refrigerate.
Wear disposable gloves when handling habanero peppers.
Use fewer habaneros for a milder sauce.
For a smoother sauce, blend thoroughly and strain if desired.
Treat as a refrigerated fresh sauce, not a shelf-stable canned sauce.
