Ingredients

4 cups vegetable broth

2 cups heavy cream

2 cups shredded sharp cheddar cheese

1 large yellow onion, diced

3 cloves garlic, minced

1 tsp smoked paprika

Salt and black pepper to taste

Fresh chives for garnish

Instructions

1.Sauté onion and garlic until soft.

2.Add broth and paprika; simmer.

3.Whisk in cream and cheese slowly.

4.Cook on low until melted and smooth.
