A healthy, crunchy, and satisfying no-bake snack featuring a granola base, creamy peanut butter center, and a smooth chocolate topping.
2 ½ cups Granola or Rolled Oats
1 cup Creamy Peanut Butter (divided)
1/3 cup Honey
1 tsp Vanilla Extract
1/2 cup Chocolate Chips
1 tbsp Coconut Oil
1.Line a muffin tin with paper liners or grease lightly.
2.In a bowl, mix granola, 1/2 cup peanut butter, honey, and vanilla until sticky.
3.Press 2 tablespoons of the mixture firmly into each muffin cup to form a base.
4.Place 1-2 teaspoons of peanut butter in the center of each granola cup.
5.Melt chocolate chips and coconut oil in 30-second intervals until smooth.
6.Spoon the melted chocolate over the peanut butter layer to seal the cups.
7.Freeze for at least 30 minutes until set and firm.
8.Store in the refrigerator or freezer and enjoy chilled.
Use certified gluten-free oats if needed.
Press the base very firmly to prevent crumbling.
Replace honey with maple syrup for a vegan option.
