Ingredients

Scale

1 whole rotisserie chicken (approx. 2.5 lbs)
1 tbsp olive oil
4-5 carrots, chopped
4 celery stalks, chopped
1 medium onion, diced
12 cups low-sodium chicken broth
1 tbsp dried parsley
1 tsp dried oregano
1 tsp dried thyme
1 tsp garlic powder
2 cups dry pasta
2 tbsp cornstarch (for thickening)

Instructions

Heat olive oil in a large pot over medium-high heat and sauté the onion, carrots, and celery until softened.
Pour in the chicken broth and stir in the dried parsley, oregano, thyme, garlic powder, salt, and pepper.
Add the rotisserie chicken, including the carcass, to the pot to infuse the broth with depth.
Simmer for 30 minutes, remove the bones with tongs, and stir in the dry pasta.
Cook for 10-15 minutes until the pasta reaches an al dente texture.
Whisk the cornstarch with a cup of broth and stir back into the pot to thicken the soup before serving.

Notes

To use a slow cooker, combine vegetables, broth, spices, and chicken; cook on low for 6-8 hours or high for 4-6 hours. Remove bones, add pasta, and cook for 15-20 minutes before whisking in the cornstarch mixture.
