2 lbs chicken thighs, boneless and skinless
3 tbsp regular soy sauce
1 tbsp dark soy sauce
1 tbsp oyster sauce
1 tsp black pepper
1 tbsp corn starch
2 bunches scallions, white and green parts separated
2 tbsp cooking oil
1.Marinate chicken thighs with soy sauce, oyster sauce, pepper, and corn starch for 10 minutes.
2.Heat oil in a non-stick pan over medium heat.
3.Pan fry chicken pieces until fully cooked and golden brown.
4.Add the white parts of the scallions and cook until softened.
5.Stir in the green parts of the scallions for 10-20 seconds.
6.Serve hot over rice or noodles.
Use chicken thighs for the best texture.
Dark soy sauce is optional but adds great color.
Serve immediately for best results.
