A cheesy, flavorful sheet pan taco casserole layered with seasoned ground beef, black beans, corn, and melted cheese with minimal cleanup.

1 lb ground beef

1 small yellow onion, diced

2 cloves garlic, minced

1 packet (1 oz) taco seasoning

1/4 cup water

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels, drained

1 can (14.5 oz) diced tomatoes, lightly drained

4 cups tortilla chips, lightly crushed

2 cups shredded Mexican blend or cheddar cheese

1 avocado, sliced

1/4 cup fresh cilantro, chopped

Sour cream, salsa, and lime wedges for serving

Instructions

1.Preheat oven to 400°F (200°C) and grease or line a sheet pan.

2.Cook ground beef and onion in a skillet until browned; add garlic and drain excess grease.

3.Stir in taco seasoning and water; simmer 2–3 minutes until reduced.

4.Mix in black beans, corn, and diced tomatoes.

5.Spread tortilla chips on the sheet pan, top evenly with beef mixture, and sprinkle with cheese.

6.Bake 10–15 minutes until cheese is melted and bubbling (broil 1–2 minutes if desired).

7.Rest 3–5 minutes, add fresh toppings, and serve warm.

Notes

Drain beans, corn, and tomatoes thoroughly to prevent sogginess.

Reserve a handful of chips to add on top right before serving for extra crunch.

Use freshly shredded cheddar or Monterey Jack for the smoothest melt.
