6-8 large day-old croissants, torn into pieces
8 large eggs
1.5 cups whole milk
1 cup heavy cream
2 cups shredded sharp cheddar or Gruyère cheese
1 lb cooked turkey sausage crumbles
1 tsp garlic powder
1/2 tsp smoked paprika
Salt and black pepper to taste
2 tbsp fresh chives, chopped
1.Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
2.Place half of the torn croissant pieces in the bottom of the prepared dish.
3.Evenly sprinkle the cooked turkey sausage and half of the shredded cheese over the croissants.
4.Top with the remaining croissant pieces and the rest of the cheese.
5.In a large bowl, whisk together eggs, milk, cream, garlic powder, paprika, salt, and pepper.
6.Pour the egg mixture over the croissants, pressing down gently to ensure soakage.
7.Bake for 40-45 minutes until the custard is set and the top is golden brown.
8.Garnish with fresh chives and let stand for 5 minutes before serving.
Use stale croissants for the best texture.
For a vegetarian version, swap sausage for sautéed mushrooms and spinach.
