1.5 lb chicken breast
1 red bell pepper, deseeded and cut into wedges
1 yellow bell pepper, deseeded and cut into wedges
1 green bell pepper, deseeded and cut into wedges
2 large onions, peeled and cut into wedges
2 tsp oil
1 tsp chili powder
1 tsp ground cumin
2 tsp paprika
1/4 tsp cayenne pepper
1/2 tsp garlic powder
1 tsp sea salt
1 tsp ground black pepper
1. Add chicken, peppers, onions, oil, and seasoning to the slow cooker.
2. Cook on HIGH for 3 hours or LOW for 5–6 hours.
3. Check chicken is fully cooked, then slice and return to the vegetables.
4. Drain excess liquid if needed.
5. Serve warm with tortillas and your favorite fajita toppings.
For firmer peppers, add them during the final 30 minutes.
Adjust cayenne pepper to taste.
