Soft, golden cookies stuffed with a velvety cream cheese filling and sweet caramel swirls.

Ingredients

1 cup unsalted butter, softened

3/4 cup brown sugar

1/2 cup granulated sugar

1 large egg

1 tsp vanilla extract

2 1/2 cups all-purpose flour

1 tsp baking soda

1/2 tsp sea salt

8 oz cream cheese, chilled

1/4 cup powdered sugar

1/2 cup soft caramels, chopped

Instructions

1. Beat chilled cream cheese and powdered sugar; freeze small spoonfuls for 20 mins.

2. Cream butter and sugars until fluffy; beat in egg and vanilla.

3. Mix in dry ingredients to form a soft cookie dough.

4. Wrap dough around frozen cream cheese balls and a piece of caramel.

5. Bake at 350°F (175°C) for 10–12 minutes.

6. Cool on the pan for 10 minutes before moving.

Notes

Keep filling frozen until the moment of assembly to prevent leaking.

Store in the refrigerator for up to 4 days.

Drizzle with extra caramel before serving for a professional look.
