Ingredients

Scale

14 oz green cabbage coleslaw mix

1 cup finely sliced red or purple cabbage

1/2 cup shredded carrots

3-4 green onions, chopped

1/2 cup real mayonnaise

2 tbsp white vinegar

1 tbsp sugar

1/2 tsp mustard

1 tsp celery seed

1 tsp coarse ground black pepper

1/4 tsp table salt

Instructions

1. Combine coleslaw mix, purple cabbage, carrots, and green onions in a large bowl.

2. Whisk mayonnaise, vinegar, sugar, mustard, celery seed, pepper, and salt.

3. Pour half to two-thirds of the dressing over vegetables and toss.

4. Cover and refrigerate for 30 minutes to 2 hours.

5. Add remaining dressing and toss before serving.

6. Garnish with extra pepper, green onions, or parsley if desired.

Notes

Chill before serving for the best flavor.

Reserve some dressing to maintain the ideal consistency.

Adjust sugar and vinegar to taste.

Refrigerate leftovers in an airtight container for 3-4 days.

Do not freeze, as the dressing and cabbage texture may change.
