A dairy-free tiramisu using smashed strawberries, whipped cream, and mascarpone. No espresso or alcohol required—rely on naturally sweet strawberry layers for flavor and texture.
3 cups fresh strawberries, roughly chopped
⅓ cup granulated sugar
21 oz strawberry pie filling
2 cups heavy whipping cream
2 tsp vanilla extract
¾ cup powdered sugar
6 tbsp instant pudding mix
16 oz mascarpone cheese (dairy-free preferred)
12 oz unsweetened ladyfingers (gluten-free optional)
12 cubes chocolate ganache or fresh fruit
Combine strawberries and sugar in a bowl. Let sit 10 minutes to release juices.
Gently smash strawberries with a fork and mix in pie filling.
Beat cream and vanilla until frothy. Add powdered sugar and pudding mix; beat until stiff peaks form.
Fold in cold mascarpone cheese until smooth.
Spray a baking dish with nonstick spray. Dip ladyfingers into strawberry mixture and layer in the dish.
Spread half the strawberry mixture then half the mascarpone layer. Repeat for a second layer.
Cover and refrigerate at least 6 hours before serving.
Use overripe strawberries for maximum sweetness
Chill mixing bowls for best cream results
Measure mascarpone directly from the fridge to prevent curdling
Use tongs to handle ladyfingers for even soaking
