These golden, crispy Breakfast Egg Rolls are filled with fluffy scrambled eggs, melted cheddar cheese, and fresh green onions for the ultimate morning treat.

Ingredients

8 egg roll wrappers

6 large eggs

1 cup shredded cheddar cheese

1/4 cup diced bell peppers

2 green onions, sliced

1/2 tsp salt

1/4 tsp black pepper

Vegetable oil for frying

Water for sealing

Instructions

1. Whisk eggs with salt and pepper; scramble in a pan until set.

2. Mix in peppers and onions while warm.

3. Place filling and cheese on each wrapper.

4. Fold sides in and roll tightly.

5. Seal the edges with a dab of water.

6. Fry in 350°F oil for 2-3 minutes until golden brown.

7. Drain on paper towels and serve hot.

Notes

Air fry at 400°F for 8-10 minutes for a lighter version.

Can be prepped the night before and fried fresh.

Serve with spicy mayo or salsa for dipping.
