Homemade BBQ Chicken Rice Bowls

Tender shredded BBQ chicken served over aromatic garlic butter rice with sweet corn and peppers. A perfect high-protein meal prep solution.

Ingredients

2 lbs chicken breast, boneless

2 cups jasmine rice, cooked

1 cup BBQ sauce (honey or hickory)

2 tbsp garlic butter

1 cup sweet corn

1 red bell pepper, diced

1/2 red onion, diced

Fresh cilantro and lime for garnish

Instructions

1.Cook rice and stir in garlic butter.

2.Sear chicken in a skillet until golden.

3.Add BBQ sauce, cover, and simmer until tender.

4.Shred chicken and toss back in sauce.

5.Saute vegetables until crisp-tender.

6.Layer rice, chicken, and veggies in bowls.

Notes

Use a slow cooker for the chicken to save time.

Swap for Korean BBQ sauce for a fusion twist.

Store in airtight containers for up to 4 days.
