1 medium Green Cabbage, sliced into wedges
3 tbsp Avocado Oil
1 tsp Turmeric Powder
1 tsp Kashmiri Red Chili Powder
1 tsp Cumin Seeds
1/2 tsp Brown Mustard Seeds
1/2 tsp Garam Masala
Salt to taste
Fresh Cilantro and Lime wedges for garnish
1. Preheat oven to 425°F (220°C) and line a baking sheet.
2. Mix oil, turmeric, chili powder, cumin, mustard seeds, and salt.
3. Brush the spice oil onto both sides of the cabbage wedges.
4. Roast for 20–25 minutes, flipping once, until edges are crispy.
5. Sprinkle with garam masala and garnish with cilantro and lime.
Ensure cabbage is dry before roasting for maximum crispiness.
Do not crowd the baking sheet; use two sheets if necessary.
Store leftovers in an airtight container for up to 3 days.
