2 cups rolled oats
1/2 cup creamy tahini or almond butter
1/4 cup coconut sugar
1 cup fresh strawberries, finely diced
1 tbsp vanilla extract
1/2 tsp baking soda
1/4 cup vegan white chocolate chips (optional)
1. Preheat oven to 350°F and line a tray.
2. Mix nut butter, sugar, and vanilla until smooth.
3. Stir in oats and baking soda.
4. Gently fold in diced strawberries and chips.
5. Scoop dough onto the sheet and flatten slightly.
6. Bake for 12-14 minutes until golden.
7. Cool completely on the pan before serving.
Blot strawberries with a towel to remove excess moisture.
Store in the fridge for up to 5 days.
Use certified gluten-free oats if needed.
