An authentic, hearty Mexican beef stew (Carne Guisada) featuring tender beef tips and potatoes in a rich, spiced gravy.

Ingredients

2 lbs beef stew meat, cubed

3 large potatoes, peeled and cubed

2 tbsp vegetable oil

1 onion, diced

3 cloves garlic, minced

1 bell pepper, chopped

2 cups beef broth

8 oz tomato sauce

1 tsp cumin

1 tsp chili powder

Salt and pepper to taste

Instructions

1. Sear seasoned beef in oil until browned.

2. Sauté onion, garlic, and pepper in the same pot.

3. Stir in broth, tomato sauce, and spices.

4. Add beef and potatoes back to the pot.

5. Simmer on low for 90-120 minutes.

6. Serve warm with tortillas.

Notes

Use chuck roast for the most tender results.

Store in an airtight container for up to 4 days.

Pairs perfectly with Mexican red rice.
